Nothing like trying a healthy, new soup on the second day of the year.
You will need –
l green pepper
1 medium onion
1 can 14 1/2 ox. chicken broth (to make it really healthy, get sodium lite)
1 package frozen spinach – or chopped fresh spinach
1 1/2 cups sliced carrots
1 cup cheese-filled tortellini
1 teaspoon dried crushed basil
1/2 teaspoon dried oregano
One cooked chicken breast chopped into stew pieces. (I didn’t precook mine. I simply made sure I cut it in small enough pieces and cooked it thoroughly in the stew.)
1. Chop up the pepper, onion and carrots and spinach.
2. Mix the chicken broth and two cups water in a large pan and bring to boil. Add the pepper, onion, carrots, spinach, tortellini and spices. Cover and simmer for 15 minutes or until the vegetables are tender. (You can experiment here with more or less basil and oregano and can throw in some other spices to – to make this according to your taste.)
3. Stir in the chicken and cook for another 10 minutes or so – until the chicken is cooked through.
